Sugar Free Raspberry Dessert

I bought raspberries last week for the first time ever at Aldi.  I have noticed fresh raspberries have become more prevalent in our state in the last few years.  Growing up in the South, I thought raspberries were only eaten by people out there and I think I am referring to people who lived in California or maybe even Florida.  The only time I ever tasted raspberries was in the wonderful Krispy Kreme jelly filled donuts.  I discovered at that time that I loved the flavor of the raspberry.

This is how I prepared the dessert:

1 12 ounce package of frozen raspberries or 2 cups of fresh raspberries

1/2 cup of Splenda Baking Sugar Substitute

1 pkg of Jello Sugar Free Cheesecake Pudding and 1 and 1/2 cups of milk to prepare the pudding

1/4 teaspoon of almond extract

1/2 cup of pecans  toasted

1 small container of whipping cream

1/2 teaspoon of vanilla

Around here we’re preparing for my son’s school’s largest fundraiser of the year–the St. Paddy’s Day Bash!  Last year it was great and most importantly it was successful in raising money to benefit our kids.

Leading up to last year’s event I made hats, cookies, a clever disguise, and the centerpieces for the event itself.

I’m getting into the mood again and made some four-leaf clover pancakes for breakfast this morning.  I made my favorite pancake batter and dyed it green.  I poured it into this squeeze bottle.  I’m sure that somewhere out there someone makes and sells an appropriately festive pancake shaper, but I haven’t had much success with them in the past.  The pancake always sticks and I end up frustrated and eating pancakes that look like a T-Rex had his way with them first.  I’m in love with the squeeze bottle now.  Lots…

magic monday – cupcake edition


As spring draws near, it seems as though our tastes all migrate towards the light and pretty. Don’t we all want to try and hurry mother earth along just a tiny bit with our lipstick, clothing, or food choices? I know that as soon as March hits, my kitchen becomes less of a soup-factory, and more often than not, cupcakes, pies and cookies line the counters.

I’d love to share one of my favorite spring treats, cardamom cupcakes with rosewater frosting. Cardamom and Rosewater are a flavour match made in heaven, and cupcakes are the perfect catalyst for such a combo.
