Tuna Melt Casserole

1 package corkscrew pasta

3 c. broccoli flowerets

2 tbs butter

2 tbs all-purpose flour

3/4 tsp salt

1/4 tsp pepper

4 cups milk

1 c. shredded swiss cheese

1 can chunk light tuna canned in water

2 medium tomatoes cut into 1/4 inch-thick slices

 

Preheat oven to 400 degrees. In a large pot, cook pasta in boiling salted water for 5 mins, add broccoli to pasta and cook additional 5 mins, or until broccoli is tender and pasta is al dente. Drain well, and return to pot. Set aside. Meanwhile, in 3 qt saucepan, melt butter over low heat. Stir in flour salt and pepper.  Cook, stirring, for 1 minute. Gradually, stir in milk, increase heat to med-high, and cook, stirring occasionally, until mixture thickens and boils. Boil for 1 minute, stirring frequently.
