Shakshuka is a Middle Eastern vegetarian dish (but not Vegan) that is quite filling and easy to make. It’s perfect for breakfast, lunch, or dinner. We thank reader Hadar Bar of Tarzana, California, for submitting this wonderful recipe which we have modified only slightly.

1 green pepper
1 red pepper
Vegetable oil
2 cloves of garlic (minced)
1 medium sized onion
2 tomatoes
2 mushrooms (optional)
1 15oz. can of tomato sauce (optional)
4 eggs

Cooking time 30-40 minutes
Serves 4 people


–In a medium saucepan, pour just enough vegetable oil in to fill about half the surface of the pan and turn the flame to its lowest setting.

–Slice one onion and place it in the saucepan.

–When the onion starts to brown, mince the two cloves of garlic and add them to the saucepan.
