Cherry and apple strudel

Food for thought

• 3 Golden Delicious apples, peeled, core, thinly sliced
•  1 tin black  cherries, drained
• 100 g  castor sugar
• 2 tbsp fresh lemon juice
• 25 ml port
• 1 tsp ground cinnamon
• Melted butter, to grease
• 10 sheets filo pastry
• 60 g butter
• 100 g pecan nuts
• Pure icing sugar, to dust
Peel the apples and cut into wedges. Melt 60 g of butter and sugar, add the apples and let it simmer for about 5 minutes.
Combine the apple, cherries,  pecan nuts, port,  lemon juice and cinnamon in a large  bowl. Set aside for 2 hours to marinate. Drain.
2. Preheat oven to 180ºC. Lightly brush a baking tray with butter. Place the filo on a clean work surface. Cover with a dry tea towel, then a damp tea towel (this prevents it drying out). Brush 1 filo sheet with melted butter. Top with another filo…
