I wanted to whip up a quick batch of cookies one afternoon. Peanut butter cookies are always fast and easy. Which made me think; a recipe that simple can’t be hard to make gluten free. (I’m in the process of celiac testing so I’ve been trying gluten free alternatives.) And I am so glad that I did. These are better than my old recipe. Everyone who tried them agreed! Softer, chewier and they stayed that way longer.



Gluten Free Peanut Butter Cookies

1 cup peanut butter [use crunchy for a crunchier cookie]
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract


1. Preheat oven to 350°F
2. Mix peanut butter and sugars.
3. Add egg and vanilla extract.
4. Take large spoonfuls and roll into balls.
5. Press onto cookie sheet with a fork.
6. Bake for 10 minutes.
