You don’t have to wait until St Davids day to enjoy the humble leek, its an under used member of the ‘allium’ family of veg, the same family as garlic and onion.
Its great in soups as it gives a milder and deeper flavor than onion… to put it simply for those who have never eaten one, its like an onion and a garlic clove got together and made a mutant green tasty hulk baby.
Now that’s cleared up, the inspiration to make this well known soup came to me when I was browsing around Hammersmith market in west London, and noticed that there was a new stall full of vegetables grown locally, some even from the owners back garden, amongst all the dirty potatoes and big bunches of in season rhubarb sat some giant leeks, some of the nicest i’v seen in a while, so I went on abit of a veggie spree.
