My afternoons consist of many things. Many interesting things like watching people attempt to parallel park from my window (bro, your car doesn’t fit…!) sweeping my floors (dark wood shows errthang) and occasionally baking up a storm of goodies. My latest venture was a bit risky, a bit complicated. Caution: patience is involved….LEMON BARS!

Nah, they’re not nearly as hard to make as I made it sound. You really only need time, an oven and a few lemons…

Crust
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, softened
1 tsp. grated lemon peel

Filling
4 eggs
2 cups granulated sugar
1/4 cup all-purpose flour
1 tsp. baking powder
1/4 cup fresh lemon juice
1 tsp. grated lemon peel
