This recipe is a true winner! There aren’t too many months left where we can devour wintry squash and root veggies, so I’ll eat up while I can.

Makes 4 halves:

Preheat oven to 400

Cut 2 acorn squash lengthwise

Place squash cut side down on a baking sheet. Add a little water to the pan.

Place squash in pre-heated oven.  They will take anywhere from 30-35 minutes to cook. You will know they are ready by testing with a fork. They should be soft.

While squash is cooking add 1 cup of quinoa to 2 1/2 cups of vegetable broth. Let boil then immediately cover and reduce to simmer. Cook until all of the liquid has absorbed.
