The sweet and sour taste of the lime and sugar in this dish is reminiscent of South East Caramel lime chickenAsian cuisine, especially Thai, but the flavour of lime and caramelised sugar with fried chicken also seems fundamentally Caribbean. I don’t eat chicken very often, so it’s a pleasure when I can get stuck into a juicy thigh or drumstick, happily downing my knife and fork to do so. This recipe is adapted from one in Caribbean Food Made Easy. I served this black bean soup as a starter.
