Busy Life of Five


This was what we had for dinner tonight and it was so yummy and easy to make. Enjoy!

1 can chickpeas, drained and rinsed

About 1 cup of cherry tomatoes cut in half

Sweet peppers-I used about 5 because they are small

About 6 fresh baby bella mushrooms cut up

1/2 cup of cut up black olives

1/2 cup feta cheese

Red wine vinegar- to taste

Apple cider vinegar – to taste

3 tablespoons olive oil

Dry or fresh basil to taste

-Cut up all veggies and mix together. You can add more or less of any veggie

-Add the vinegars and basil to taste

-After everything is mixed add the feta cheese

-Serve on its own or put over salad (what we did)
